Cauliflower Curry

Ingredients

 

1 large head cauliflower, cut into 3cm florets

2 tablespoons vegetable oil

1 tablespoon grated peeled fresh ginger

3 red peppers, seeded and chopped at diagonal angle

1 tablespoon dried curry powder

½ cup of chicken stock

1 teaspoon sugar

1 teaspoon salt

2 fresh chilies, sliced finely

Juice 1 lemon

3 sprigs fresh cilantro, finely chopped

Preparation:

Heat the oil in a medium saucepan over medium heat. Add the dried curry powder and stir briefly for 30 seconds. Add ginger and peppers and cook for 1-2 minutes. Add the cauliflower, stir for 2 minutes, then add the chicken stock. Turn the heat to low, cover with a lid, and cook until stock reduces. 

 

Stir in salt, sugar, and lemon juice. Sprinkle with cilantro and chili as garnish. Ready to serve.
