Mushroom Leek Soup

Ingredients

 

½ cup butter

4 stalks of Chinese leeks, white part only, sliced thin

½ lb. fresh shiitake or matsutake mushrooms, chopped or sliced thin

¼ cup flour

1 tsp. salt

Dash cayenne pepper

2 cups chicken broth

1/2 cup milk

1/4 cup Chinese rice wine

Preparation:

Heat a saucepan and add 1/4 cup of butter to sautéd leeks.  Remove and set aside.  In remaining butter,  sauté mushrooms until soft. Season with salt and slowly stir in the chicken broth and milk.  Keep the heat low, and keep stirring occasionally until the soup comes to a slow boil.  Add leeks, rice wine, salt and pepper to taste. Turn off heat. Ready to serve.
