Squid Mango Pepper Salad

Ingredients

8 small to medium squid, cut into 2cm thick rings

1 large firm mango, cut into 2cm strips

1 small green bell pepper, cut into 2cm strips

2 tablespoons soy sauce

2 tablespoons vegetable oil

3 tablespoon rice wine

1 teaspoon ginger, finely minced

1 tablespoon sugar

½ teaspoon salt

½ lemon juice

Preparation:


Heat a non-stick pan and add oil. Pan fry the squid until they are lightly cooked. Quickly add rice wine, soy sauce, sugar, ginger and salt. Set aside and squeeze ½ lemon on to the squid.

 

Plate the mango and bell peppers according to preferred style, and pair with the fried squid. Serve at room temperature.
