Ingredients
1 pound small leaf spinach
3 large oranges, sliced into round slices
¼ cup toasted pine nuts
Citrus vinaigrette dressing
To make Citrus Vinaigrette:
2 cups orange juice
¼ cup fresh lemon juice
¼ teaspoon cornstarch, mixed with 1 teaspoon water
1 teaspoon sesame oil
1 ½ teaspoon salt
Freshly ground pepper
Preparation:
Grate zest of ½ an orange and lemon
Combine the orange juice and lemon juice into a medium saucepan. Cook until the mixture boils, then add orange and lemon zests. Lower to a very low heat and simmer until liquid is reduced to approximately 1 cup. Add cornstarch then sesame oil. Remove from heat and allow the mixture to cool.
Combine spinach and oranges on a chilled serving plate. Top with citrus vinaigrette and pine nuts. The dressing can keep for 2 weeks stored in a tight jar inside a refrigerator.
