Fried eggs in a nest of potatoes with herbs

  1. Wash and dry the herbs.
  2. Peel and shred the potatoes.
  3. Heat a drizzle of oil in a frying pan, add the potatoes, and create small nests. Cook on both sides.
  4. Break the eggs into each nest just before the potatoes are finished cooking. Season then sprinkle with the mixed herbs.
  5. Serve immediately.

  • 4 potatoes
  • ¼ bunch of chives
  • ¼ bunch of parsley
  • ¼ bunch of cilantro
  • 1 tbsp oil
