Fried eggs in a nest of potatoes with herbs
- Wash and dry the herbs.
- Peel and shred the potatoes.
- Heat a drizzle of oil in a frying pan, add the potatoes, and create small nests. Cook on both sides.
- Break the eggs into each nest just before the potatoes are finished cooking. Season then sprinkle with the mixed herbs.
- Serve immediately.
- 4 eggs
- 4 potatoes
- ¼ bunch of chives
- ¼ bunch of parsley
- ¼ bunch of cilantro
- 1 tbsp oil
