Vegan mushroom Croque Monsieur

Method

  1. Peel and chop the onion
  2. In a frying pan, sweat the onion in some olive oil, then add the sugar, salt, pepper, and Espelette pepper, caramelize lightly, and deglaze with vinegar
  3. Carefully clean, dry, and slice the mushrooms, then fry them in a pan with some olive oil
  4. Arrange some onions, mushrooms, and cheese on a slice of bread, cover with another slice, and tie up the sandwich
  5. Cook in a frying pan until both sides of the Croque Monsieur are golden brown.
     

Ingredients

  • 150 g (5.3 oz) mushrooms
  • 1 white onion
  • 75 g (2.6 oz) grated Gouda cheese (without animal rennet)
  • Olive oil
  • 2 tbsp balsamic vinegar
  • 10 g (1 tbsp) sugar
  • 1 pinch of Espelette pepper
  • Pepper and fleur de sel
  • 4 slices of sandwich bread (for 2 Croque Monsieurs)
