Grilled summer skewers: Veal Orloff rolls

  1. Flatten the cutlets, then top them with one slice of ham and one slice of cheese
  2. Roll and tie them up
  3. Cut them into pieces and thread with a bamboo skewer
  4. Grill each side for a few minutes
  5. Serve hot


  • 12 veal cutlets
  • 12 thin slices of cheese (Emmental, sheep's milk tomme)
  • 12 slices of country ham
  • 10 cl (2/5 cup) olive oil
  • Salt, pepper
