Roasted carrots with maple syrup
- Peel the carrots. Cut them in quarters lengthwise.
- Heat a pat of butter in a stainless steel frying pan, then add the maple syrup, salt, pepper, olive oil, carrots, and a splash of water. Cover and cook for around 8 minutes.
- Bake without a lid in the oven at 180°C (360°F) for 10 to 15 minutes, verifying that the carrots are cooked all the way through. The water will evaporate and the maple syrup will caramelize the carrots.
- Serve as an appetizer or with a roast and some rice or potatoes.
- 4 carrots
- 2 tbsp maple syrup
- 2 tbsp olive oil
- 1 tbsp cumin seeds
- Salt, pepper
